What you will need
°2 pounds boil potatoes – cutting to 1-inch pieces
°3 tablespoons extra virgin olive oil
°5 to 6 garlic cloves
°1 tsp fresh lemon juice
°1 tsp chop green onions
°1 tsp fresh parsley
°Salt & pepper to taste
Rinse potatoes under cold water; drain also dry.
Heat olive oil in nonstick skillet on medium heat. Adding potatoes (should be in single layer). Cooking, turn frequently, for 10 min,
Adding garlic; covering also reduce heat to low. Cooking, stir occasionally, for 15 to 20 min
Removing garlic; peeled skins. In bowl, crushing garlic & adding it to potatoes. Stirring in lemon juice. Adding green onion; cooking another min or two, to heated through.
Sprinkling with parsley & season to taste.
